Sweet Fennel Sausage Parmigiana Sandwich

Anything “Alla Parmigiana” is always delicious meal, even sausage!

INGREDIENT LIST

1 pack Four Star Sweet Fennel Sausage, cut in half4ea Ciabatta 

1/2 AP Flour

2 eggs

1/2 cup Italian bread crumbs

1/4 cup Parmesan cheese grated

2 Cups Olive Oil

2 cups Pomodoro sauce @terlatokitchen

Fresh buffalo mozzarella sliced (approx. 8 slices)

Fresh basil leaves

For the garlic butter

1/2 cup salted butter

2 garlic cloves, chopped

1/2 cup parmesan cheese grated

1 tsp Italian seasoning

1 Tbsp fresh parsley, chopped

DIRECTIONS

Preheat oven to 350 degrees.

Mix the softened butter, garlic, parsley and set aside.

Beat eggs in a shallow bowl, mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl. 

Dredge the sausage in flour, shake off excess, dip in egg, then bread crumb mixture.

Over medium high heat olive oil in pan.  Add breaded sausage and cook until golden and crispy.  About 2 minutes per side.

Transfer sausage to a baking dish. Top with 2-3 tablespoons of pomodoro sauce. Top with basil, sliced mozzarella cheese, sprinkle of parmesan cheese and bake until cheese is browned and bubbly. About 10 minutes.

Meanwhile, spread garlic butter on ciabatta bread and bake until brown and toasted.

Place sausage parmesan on the ciabatta, garnish with some fresh basil and grated parmesan cheese.
